Scolastici Farm

Overview

For over a century the Scolastici Farm, set in the heart of the Sibillini Mountains National Park, has been rearing the sheep whose milk is used to make fresh, seasoned and cave-aged Pecorino as well as Cacio Sopravissano and fresh or salted ricotta. The farm's production has been certified organic since 2001 and only natural rennet is used.
